Jordan Diniz

Owner | Executive Chef

Chef Jordan Diniz opened his much anticipated first restaurant: ēst Restaurant, an intimate Dinner & Cocktail venue in the vibrant Queen Street East community of Riverside, Toronto.

Formerly the Executive Chef and Owner of Novus Fine Dining in Pickering, his menu brought Novus to being one of the highest rated catering companies in the Greater Toronto Area. Novus Fine Dining specializes in custom tasting menus suited to design the best dining experience for your special event from the comfort of your own home.

Jordan graduated from the postgraduate Italian Culinary Arts program at George Brown College in April 2019. The program is in partnership with ALMA, the world-famous Scuola Internazionale di Cucina Italiana,
near Parma, which is one of Italy’s finest culinary schools. Jordan also got the opportunity to stage in two Michelin starred restaurants in two different parts of Italy Abruzzo and Piemonte. The opportunity
to use the vineyards and local markets of Italy as a blank canvas for his art was an incredible and exciting experience.

Jordan’s culinary outlook is oriented around creating unique, sustainable, and, of course, delicious meals for all his customers. Since his youth, he has had a passion for cooking, learning about the subtle nuances of different foods and what can make a meal truly outstanding.

 

Dominic Fidilio

Chef de Cusine

Chef Dominic Fidilio grew up in Pickering, Ontario in a very food-focused family, where eating and cooking were very important. This is where Dominic’s passion for cooking began.


From here, in 2016, Dominic attended George Brown culinary school and took part in the post graduate Italian program, where he went to ALMA scuola di Cucina in Emilia-Romagna before completing a Stage under Michelin starred chef, Stelios Sakalis. Upon completion of the Italian post graduate program in 2019, Dominic moved back to Toronto and worked at Canoe Restaurant for over a year. After Canoe, Dominic worked at Novus Fine Dining as a Sous Chef before stepping up to his current position as the Chef De Cuisine at EST Restaurant in Toronto.

 

Cody Rowsell

SOUS CHEF

Chef Cody Rowsell grew up in Ajax, Ontario in a family of 5, His family loves cooking but we're all far from chefs. In 2014 Cody worked in a few small restaurants working the line and this is where his realized he had a true passion for cooking and would one day open up his own restaurant.

In 2016 Cody attended Durham college taking the Culinary Management program where he worked in the schools fine dining restaurant Bistro 67 working along side a number of red seal chefs and Canadas very own professional chef Jamie Kennedy. From there Cody managed a few restaurants over the next 4 years where he met Chef Jordan Diniz. Together they started a catering company named Stones n Sticks that later rebranded into Novus Fine Dining.
